Project A.1:Evaluation of potential immunomodulatory polysaccharides in fruits, vegetables and mushrooms
Aims: To extract, purify and characterize non-starch polysaccharides (NSP) of banana, passion fruit, chayote and Pleurotus albidus, and to evaluate the immunomodulatory action in macrophage cultures and by interleukins, NO and phagocytosis assays. Obtaining banana PNAs in a pilot scale considering the application perspective as a functional ingredient.
Project A.2: Health impacts of unripe banana meal (UBF).
Aims: to evaluate the physiological effects of UBF intake.
Subprojects:
A.2.1 - Effects of functional ingredients on gastrointestinal hormones modulation in healthy volunteers;
A.2.2 - Effect of unripe banana flour (UBF) on intestinal function and microbiota in constipated diabetic patients with chronic kidney disease (CKD), submitted to hemodialysis;
A.2.3 - Effect of unripe banana flour on viability of probiotic bacteria and texture of fermented milk.
