Research
The scientific research conducted at FoRC is organized in four pillars:
1 – Biological Systems in Foods
2 – Food, Nutrition and Health
3 – Food Quality and Food Safety
4 – New Technologies and Innovation
The accomplishments of FoRC can currently be clustered in five “inter-pillar” themes. The titles of the themes changed a little since the last report, to better reflect their focus. The five themes are:
A. Carbohydrates, food and health;
B. Brazilian food biodiversity, bioactive compounds and health;
C. Microbes in foods: risks and benefits;
D. New food processing and packaging technologies;
E. Food components and the Brazilian Food Composition Table.
